Tofu Ricotta Cheese

Use this in recipes calling for a ricotta-style filling.

2 pounds firm tofu
1/3 cup lemon juice
4 teaspoons granulated sugar
1 teaspoon salt
4 tablespoons oil
2 teaspoons basil
1 teaspoon garlic powder

Grind tofu through a food mill or mash with a fork. Mix in remaining ingredients.
