Jackie's Sautéed Shrimp Summer Salad: 3-4 Cloves of Garlic Olive Oil Balsamic Vinegar 1 - 2 lbs of fresh uncooked large shrimp (shelled & deveined) 1 Large Bag of clean Mixed Greens 1-2 Handfuls of Slivered Almonds 1 -2 Handfuls of Dried Cranberries 1 -2 Handfuls of Shredded Mozzarella Cheese 1 Banana, Sliced Old Bay Seasoning 1 lemon 1 Packet of Good Seasons Basil Vinaigrette Salad Dressing & Recipe Mix Pre-heat a skillet. Drizzle enough Olive Oil to coat the bottom.* Peel and Chop garlic and then add to skillet. Stir with a wooden spoon to sauté garlic. Prepare Good Seasons Mix with Olive Oil and Balsamic Vinegar per instructions on Packet. In a large Bowl, add Mixed Greens, Slivered Almonds, Dried Cranberries, Shredded Cheese and Banana slices. Add Shrimp to Skillet with Garlic and Olive Oil. Sautee with wooden spoon until Shrimp is cooked (About 3-5 minutes). Add Mixed Salad Dressing to salad. Toss. Add cooked shrimp to Salad right before serving. *Jackie's father, Lou Caddy, always taught her NEVER to pour Olive Oil on a cold pan. Always pre-heat the pan first Pesto Baguette Appetizer: Toasted Baguettes 8-12 Large Fresh Basil Leaves 3 -- 6 Grapevine Tomatoes 2 Tablespoons of Olive Oil Balsamic Vinegar Fresh Mozzarella Cheese 1 Teaspoon of Sautéed Garlic from previous Summer Salad Recipe Crush Bay leaves and Olive Oil in small food processor or blender to make Pesto. Mix in about a teaspoon of the sautéed Garlic from the previous Summer Salad Recipe. Assemble a toasted baguette as the base. Spoon the Pesto on top of each baguette. Add a tomato slice and then a Mozzarella slice. Drizzle with Balsamic Vinegar. Top with a slice of Basil. Insert a toothpick if necessary. Fresh Berry Surprise: 4 -- 6 Individual Round Sponge Cakes Fresh Strawberries & Raspberries/Blackberries, sliced 1 Banana, sliced 1 Chocolate Bar 1 Serving of either Blackberry, Strawberry or Banana Light Yogurt Break apart the chocolate bar into small pieces and melt in either a Microwave or double boiler. Spoon a tablespoon of the melted chocolate in the bottom of each the sponge cakes. Place sliced fruit (1-3 pieces of each type) on top of the melted chocolate. Top with a teaspoon of the yogurt. Refrigerate before serving. Garnish with fresh Mint and a slice of Strawberry.

Jackie Kennedy's Beef Stroganoff

2 pounds boneless beef sirloin
Salt and ground black pepper to taste
3 tablespoons all-purpose flour
4 tablespoons butter, divided
2 cups beef broth
1/2 cup sour cream
3 tablespoons tomato juice or paste
1/4 cup grated onion
Fresh sliced mushrooms

Ask butcher to cut beef into strips. Season beef generously with salt and pepper. Cover and let stand 2 hours in cool place.

In large skillet, whisk flour and 3 tablespoons butter over low heat until mixture bubbles and forms a smooth paste. Slowly add beef broth, stirring constantly until mixture thickens. Let boil 2 minutes.

Reduce heat and add sour cream alternately with tomato juice, still whisking. Simmer slightly 1 minute; do not let boil.

In separate skillet, quickly brown beef and onion in remaining 1 tablespoon butter over medium heat. Add contents of meat pan to sauce; season with salt and pepper. Simmer very gently or cook over hot water in double boiler 20 minutes.

Makes 6 servings.
