Taken from http://users3.ev1.net/~fontlady/crockpot_alfredo_chick_mush_spinach.html CROCKPOT ALFREDO CHICKEN WITH MUSHROOMS AND SPINACH 4-6 large boneless chicken breasts Seasoning salt, to taste 16 ounce jar Carb Options Alfredo Sauce * 3 cloves garlic, cut in half 1/2 pound fresh mushrooms, cut in half Garlic powder Freshly ground pepper Fresh parsley, chopped 4 1/2 ounces fresh spinach, about 1/2 bag Place chicken in slow cooker and sprinkle on both sides with seasoning salt. Add sauce and garlic; mix to coat chicken with sauce. Place mushrooms on top of chicken; sprinkle with a little garlic powder, pepper and parsley. Cook on LOW about 4 hours or until chicken is done. Add spinach and cook just until spinach starts to wilt. If your chicken breasts are quite large, you may be able to cut each one in half and get about 8 servings. * If you can't get Carb Options Alfredo Sauce, you can use a brand like Ragu. Spinach, Ham and Cheese Stuffed Chicken Breasts

Yield: 6 servings

4 chicken breasts, butterflied
3/4 pound ham, thinly sliced
3/4 pound Provolone cheese, thinly sliced
1 pound cream cheese, softened
1 pound spinach, stemmed and rinsed
Oregano
Salt And pepper

Lay the butterflied chicken breasts out flat and season with oregano, salt, and pepper.

Divide and spread the cream cheese evenly over each chicken breast. Lay spinach leaves over cream cheese to cover each chicken breast. Lay ham slices over spinach, and finish with provolone cheese. Roll each chicken up lengthwise and secure with wooden picks. Place in a single layer in lightly greased baking dish. Place in a preheated 350 degree F oven for 30 to 45 minutes, or until done.

Serve whole or slice into medallions.
