Jackie's Sautéed Shrimp Summer Salad: 3-4 Cloves of Garlic Olive Oil Balsamic Vinegar 1 - 2 lbs of fresh uncooked large shrimp (shelled & deveined) 1 Large Bag of clean Mixed Greens 1-2 Handfuls of Slivered Almonds 1 -2 Handfuls of Dried Cranberries 1 -2 Handfuls of Shredded Mozzarella Cheese 1 Banana, Sliced Old Bay Seasoning 1 lemon 1 Packet of Good Seasons Basil Vinaigrette Salad Dressing & Recipe Mix Pre-heat a skillet. Drizzle enough Olive Oil to coat the bottom.* Peel and Chop garlic and then add to skillet. Stir with a wooden spoon to sauté garlic. Prepare Good Seasons Mix with Olive Oil and Balsamic Vinegar per instructions on Packet. In a large Bowl, add Mixed Greens, Slivered Almonds, Dried Cranberries, Shredded Cheese and Banana slices. Add Shrimp to Skillet with Garlic and Olive Oil. Sautee with wooden spoon until Shrimp is cooked (About 3-5 minutes). Add Mixed Salad Dressing to salad. Toss. I was bored the other day and made this up in the kitchen. I really liked them!!! Niki's Berry Cream Muffins Ingredients 2oz raspberries (or other berries of your choice. I used strawberries this time, but like raspberries more.) 1 cup almond flour 1/4 cup flax seed meal 4oz softened cream cheese 1tsp baking powder 1tbsp oil 1/4 cup ricotta cheese 1tsp vanilla extract 2 eggs Sweetzfree (I used 25-30 drops) or Splenda to taste Directions Pre heat oven to 425* Crush raspberries. Then mix all ingredients well in large mixing bowl. Once mixed, grease muffin tin. Distribute batter evenly into 12 muffin cups. Bake at 425* for 10 minutes or till puffy and a little browned. I tried it with butter and with cream cheese. It tastes best with butter. I also made them with cream cheese frosting.
